Taco– A taco is a traditional Mexican dish consisting of a small hand-sized corn or wheat tortilla topped with a filling. The tortilla is then folded around the filling and eaten by hand. Authentic Mexican tacos are made of stewed, fried, or grilled meat. The grilled meat is marinated overnight with cumin, oregano, paprika, lime, onions, and chilies. The cooked meat is lightly seasoned with nothing but salt and pepper.

Chilaquiles– Chilaquiles is a traditional Mexican breakfast dish consisting of corn tortillas cut into quarters and lightly fried. What are chilaquiles made of? Chilaquiles (pronounced chee-lah-key-less) are a traditional Mexican breakfast made with tortilla chips simmered in sauce. Typically, they\’re made with green salsa (in Spanish, salsa verde, which yields chilaquiles verdes) or red enchilada sauce (chilaquiles rojos).


Pozole– Pozole, is a traditional soup or stew from Mexican cuisine. It is made from hominy with meat, and can be seasoned and garnished with shredded lettuce or cabbage, chile peppers, onion, garlic, radishes, avocado, salsa or limes. Traditional Mexican pozole (posole) is a rich, brothy soup made with pork, hominy, and red chiles. Pile your bowl with toppings like shredded cabbage, radishes, cilantro, lime, and avocado!

Enchiladas– An enchilada is a corn tortilla rolled around a filling and covered with a savory sauce. Originally from Mexican cuisine, enchiladas can be filled with various ingredients, including meats, cheese, beans, potatoes, vegetables, or combinations. Loaded Chicken Enchiladas are made with shredded chicken, rice, beans, corn, bell pepper, and onion mixed in a creamy sauce and topped with cheese and homemade enchilada sauce.



Mole– Mole, from Nahuatl mōlli, meaning \”sauce\”, is a traditional sauce and marinade originally used in Mexican cuisine. Mole in general mix ingredients from five different categories: chiles (at least two different types); sour (tomatoes or tomatillos); sweet (dried fruits or sugar); spices; and thickeners (bread, nuts or seeds). Once the paste is formed, it\’s mixed with water or broth, and then simmered until it\’s thick.


Tamales– A tamale or tamal is a traditional Mesoamerican dish, made of masa or dough, which is steamed in a corn husk or banana leaf. Fillings vary from meats and cheeses to fruits, vegetables, chillies and mole The wrapping can either be discarded prior to eating or used as a plate.

Birria– Birria is a Mexican dish from the state of Jalisco. The dish is a meat stew traditionally made from goat meat, but occasionally made from beef or mutton. The dish is often served at celebratory occasions. Birria is a wonderful traditional Mexican dish, originally made with goat meat, but also made with beef, veal, lamb or pork. It can be served as a stew or as a taco filling. In gastronomic terms, the word birria means: “Exquisite savory dish, full of culture and tradition.”


Sope– A sope, is a traditional Mexican dish consisting of a fried masa base with savory toppings. Also known as picadita, it originates in the central and southern parts of Mexico, where it was sometimes first known as pellizcadas.


Cemita– The cemita is a torta originally from Puebla, Mexico. Also known as cemita poblana, it derives from the city of Puebla. The word refers to the sandwich as well as to the roll it is typically served on, a bread roll covered with sesame seeds. The bread is made without egg.


Panucho– A Panucho is a Mexican food specialty from the Yucatán made with a refried tortilla that is stuffed with refried black beans and topped with chopped cabbage, pulled chicken or turkey, tomato, pickled red onion, avocado, and pickled jalapeño pepper.



Aguachile– Aguachile is a Mexican dish made of shrimp, submerged in liquid seasoned with chili peppers, lime juice, salt, cilantro, slices of cucumber and slices of onion. Raw vegetables such as cucumber are usually added. This raw seafood dish comes from the west region of Mexico and is normally prepared in a molcajete.
