Spanish cuisine consists of the cooking traditions and practices from Spain. Olive oil is heavily used in Spanish cuisine. It forms the base of many vegetable sauces. Herbs most commonly-used include parsley, oregano, rosemary and thyme. The use of garlic has been noted as “common to all Spanish cooking.”

Paella- Paella is a rice dish originally from Valencia. For this reason, many non-Spaniards view it as Spain’s national dish, but Spaniards almost unanimously consider it to be a dish from the Valencian region. Valencians, in turn, regard paella as one of their identifying symbols.

Patatas Bravas- Patatas bravas, also called patatas a la brava or papas bravas, all meaning “spicy potatoes”, is a dish native to Spain. It typically consists of white potatoes that have been cut into 2-centimeter-wide cubes, then fried in oil and served warm with a spicy sauce.

Gazpacho or Gaspacho, also called Andalusian gazpacho, is a cold soup made of raw, blended vegetables. It originated in the southern regions of the Iberian peninsula and spread into other areas. Gazpacho is widely eaten in Spain and Portugal, particularly during hot summers, as it is refreshing and cool.

Tortilla Española- Spanish omelette or Spanish tortilla is a traditional dish from Spain and one of the signature dishes in the Spanish cuisine. It is an omelette made with eggs and potatoes, optionally including onion. It is often served at room temperature as a tapa.

Gambas al Alajillo- Gambas al ajillo, pronounced gahm- bahs-ahl-ah- hee-yoh, simply translates to “shrimp with garlic shrimp” or “garlic shrimp.” And it totally lives up to it’s name: Big, juicy shrimp, swimming in a tasty, garlicy olive oil sauce.

Pisto- Pisto is a Spanish dish originally from the Region of Murcia, Castilla La Mancha and Extremadura. It is made of tomatoes, onions, eggplant or courgettes, green and red peppers, and olive oil. It resembles ratatouille and is usually served warm as a starter or to accompany another dish. 

Spanish Croquettes- are the definition of tapas perfection. They come in a delicious variety of flavors. They’re almost impossibly creamy and rich. And they’re perfect for sharing with family or friends. Being a traditional poor man’s food, ham croquettes are basically a fantastic bechamel sauce (olive oil, butter, flour, and milk) enriched with leftover scraps of Serrano ham and deep-fried to crispy perfection. The result should never be oily, or cold in the center.

Tapas- A tapa is an appetizer or snack in Spanish cuisine. Tapas may be cold or hot. In some bars and restaurants in Spain and across the globe, tapas have evolved into a more sophisticated cuisine. Tapas can be combined to make a full meal. In some Central American countries, such snacks are known as bocas.
